Set Virtual Desktop size in server?

I am trying to use UltraVNC on windows and connect from a mac with several VNC clients including built-in and TigerVNC clients.

The windows machine has a very small monitor with very small desktop resolution. The mac I'm connecting from has a very large display.

Is it possible to somehow connect to the PC via VNC and have a virtual desktop with a larger resolution then what is on the actual PC with its own monitor? If so, how do I go about doing that. I have tried everything I can think of and can't seem to figure a way.
