I've tried using the single click in the past without success and have used regular VNC just fine but for some reason I cannot get SC to work.
Connection failed - Invalid protocol!
Possible causes:
-You've forgotten to select a DSMPlugin and the server uses a DSMPlugin
-Viewer or Server are not compatible (they use different RFB protocols)
I am using port 1101 for connections. I have VNC listening on port 1101.
I didn't use any encryption that I am aware of.

You're aware that it's your VNC VIEWER that's supposed to be listening on the port you set in the SC Creator, right? So when you say you have VNC listening, I hope you mean the VNC viewer in listening mode?
SC uses a "reverse connection" where the server initiates the connection with the listening viewer; furthermore you would need to make sure any router at the viewer end is properly forwarding the port in.
Anyway, if you know all that and you're still having trouble, you might want to give the SCPrompt project a try instead.

I was able to get it working. The ID options (where it promts for support ID or session ID or something) was causing the issue. I removed it from the connection and it worked fine.
I am also trying to figure out if there is away to make this mobile? E.g. have a relay that I can connect to when I am on the road or with another client and am not at my PC to accept the incoming connection.

Yep, and that's exactly what the ChunkVNC project (hosted in part right here) aims to make easy!
There's an UltraVNC repeater (several versions) that does what you want, and ChunkVNC packages it up along with a custom client and server.

Does it allow multiple people to support multiple clients? E.g. I support a client and another person is supporting another client via the same repeater.

Yes, I'm pretty sure it does. That's part of the point of the repeater. The unique repeater session IDs it generates and uses are intended to keep things separate.
If you like a more custom Help Desk style screen, you might also try combining SCPrompt with a repeater.
