I'm not exactly sure this is a MS Logon problem...

I configured a password for my VNC server that was alpha-numeric.

for example "coffeeput2345"

But when I connect to my server all I have to type is coffeeput and I can get authenticated.

This is not a MS-Logon problem but a "classic" VNC authentication "feature".
The VNC protocol only uses the first 8 characters of the password.
This is not a UltraVNC specific bug/feature but shared with all VNC flavours.
MS-Logon uses passwords up to 32 characters long.
