Are you talking about the manifestation in the taskbar of a <b>running</b> remote control session (viewer)?

There are a few apps that will do it, including free ones.

There are probably similar apps to send it to the system tray instead.
If you really wanted, I'm sure you could recompile UltraVNC to do the hiding for you.
