Ok, I've been searching for this answer for a while and I finally found it.

Right click on the shortcut and select properties. If you look at the the "Target" line you will see "C:\Program Files\UltraVNC\vncviewer.exe" -listen
If you add a space and your port number after "-listen it will start in ...
