I played around with the latest version of ChunkVNC and have the following suggestion:

The vnchooks.dll schould be included in the InstantSupport.exe together with the following ultravnc.ini settings:

PollUnderCursor=1
PollForeground=1
PollFullScreen=1
EnableHook=1

Esp. the hook dll gives much better responsivness when typing into text fields (tested with Windows 2008 R2). This can be best verified when typing an url into IE's address field.

I believe it was removed intentionally because it is not open source. But you are free to roll it in yourself in your copies.
