If you're talking about Windows servers only, you'd better take a look at the products specifically designed for Windows Server OSes, like RecordTS.

Also, you can enable firewall-based logging to log connection attempts to the specific network port.

Actually our external consultants want to use RDP (Remote Desktop), but RDP cannot be replayed, and as we use UltraVnc in general, I am going to use a VNCviewer instead of Explorer.exe for the RDP sessions.
