Seems like the problem is that the VNC display stops updating. If you connect a monitor to the Mac mini then the mouse gestures are still being processed - which is a little dangerous!

Does that help in diagnosing the issue?

VNC viewer drop connection when connecting to Mac mini

I'm trying to use UltraVNC viewer, on Vista, to remote administer a Mac mini running Snow Leopard. I can use it for about 5-10 mins until it stops communicating with the Mac. A screen image remains, but you can't interact with it - and it doesn't update. Restarting the viewer recovers the connection ...
